GINGER ICED TEA
With cardamom, mint and honey

Here it is the perfect refreshing and thirst quencher drink. It is quite easy and very good. 
I made it the first time in London, it was that kind of unforgettable hot days of the years.


                Ingredients:
           - 1 Ginger root
           - 1/2 lemon
           - few cardamom seeds
           - Leaves of mint
           - 1 litre of mineral water
           - Honey to suit
           - Ice cubes



Preparation:
Get a bottle made of glass. You can recycle an old one (wine or oil). To clean it, dip it into water and rinse it well, removing possible etiquettes. To get rid of the smell it is possible to add a bit of vinegar, keeping on rinse it out every once a while, for few days, before using it.

Unpeel the ginger and cut it in small washers.
Squeeze the lemon, removing the seeds.
Wash the cardamom seeds.


Cooking:
Put the water into a "terracotta" tea maker adding the lemon juice, some seeds of cardamom (not many as the taste can be very strong) and the ginger.
Bringing to boil and keepon gently moderate fire for 20 minute. Take off the tea maker from fire, add honey to your liking and leave it on a fresh spot, with lid almost covering pot, for at least one hour.
Drain the tea with a tea drainer and pour it into the glass bottle. Put the bottle into the fridge for a couple of hour before serving.

Presentation:
Pour the Ginger tea on a long glass. Add 2/3 ice cubes and a couple of fresh mint leave and a slice of lemon. Enjoy it, sipping it slowly with a straw.
